Mexican Green Beans

From the kitchen at Granite


Ingredients:
1 Tbsp olive oil
1/2 Medium onion, chopped
3 Garlic cloves, minced or one Tbsp minced garlic
1‐1½ lbs. Green beans
1 – 10oz can Ro-Tel Diced Tomatoes & Green Chilies
1 Tsp Tomato paste
1 Tsp Oregano
2 Tbsp Lemon juice
1/4 Tsp Salt


Instructions:

1. Add olive oil, onion, garlic, oregano and tomato paste, in a medium size pan on
high heat stirring continuously until onions become translucent.

2. Still on high heat, add Ro-Tel Diced Tomatoes & Green Chilies and stir in until heated thoroughly.

3. Turn heat to low and allow to simmer for 15-20 minutes stirring frequently.

4. Bring to a boil and stir in the green beans. Once the beans are thoroughly mixed in, turn heat back down to low and allow to simmer on low stirring frequently for approx. 15 minutes. The longer you let the beans simmer, the better the flavor when they're done.

5. Uncover pan and cook on low another minute or two to thicken sauce.

6. Sprinkle with lemon juice just before serving warm.
