Asparagus Stuffed Chicken Breast
4 Boneless Skinless Chicken Breasts approx. 1 1/2 lb
1 Tsp Italian Seasoning
1 Tsp Garlic Powder
1 Tsp Paprika
Sea salt & Pepper
12 Asparagus stalks trimmed
1 oz Chopped Tomatoes
4 slices Mozzarella or Swiss Cheese
1 Tbsp Olive Oil
Preheat oven to 400 degrees
Sprinkle Italian seasoning, garlic, paprika, salt and
pepper on chicken
Cut each chicken breast length ways to create a pocket
within the breast.
Roll the asparagus and tomatoes up inside the cheese and
close pocket with a toothpick.
Heat olive oil in a skillet, and sear the outside of the
chicken breast until nicely golden brown, about 3-5
minutes per side.
Bake the chicken for 15-20 minutes.
