Beef Tri-Tip
From the kitchen at Spicewood


Ingredients:
3 lb Beef Tri - Tip
One Medium Yellow Onion
3 lbs of mushrooms
1 Quart of beef broth
Instructions:
1. Searing
Heat your grill
to maximum temp with lid closed. Prepare Tri - Tip
on a plate with only salt and Olive Oil,
unless your butcher pre-seasons yours for you, then
no need. Once the grill has reached max temp
place cut on
grill for 1-1/2 - 2 minutes, no more. Flip for
1-1/2 to 2 minutes keeping an eye on
the cut to make sure the drippings don't flame up
too much.
2. Remove from grill and return
to oven prep.
3. Place meat in a large baking
pan, chop onion spread evenly,
add beef broth, mushrooms,
salt.
Cover with lid or tin foil.
Place in oven at 300 for 1 hour then turn down to
200 for 1.5 hours
Remember, this cut is similar to a top quality
steak and is much better when it is prepared rare
to medium rare, so do not over cook it.
Sparkys Garlic Mashed
Potatoes
Ingredients:
Approximately 5 pounds of red potatoes
One stick of butter
3 cups of sour cream
1/4 cup of minced Garlic
Instructions
for Mashed Potatoes:
Peel, chop, clean, boil and then mash
potatoes.
( Tip: We like
the red potato skins on the potatoes and
so do most of our kids, so I don't usually
peel the potatoes )
In a mixing bowl combine the butter,
sour cream and minced garlic,
and then add the cooked potatoes and mix
thoroughly.
Instructions for Beef Gravy:
Use drippings from the
roast to mix together with
flour and milk for beef gravy.
Serve together with your choice of vegetable and
dinner rolls.
