Sweet Potatoes (Casserole)

From the kitchen of Cindy Wilt

Special equipment required:  2-quart baking dish


Filling Ingredients:

4 Cups cooked mashed sweet potatoes
1 Cup Sugar
1 tsp. Vanilla
1/2 Cup melted butter
2 Eggs well beaten
1/3 Cup milk
Filling Instructions:
Peel and boil sweet potatoes
Drain off the boiling water, mash the potatoes
Combine the ingredients in the order they're listed above
Mix well, and place in a ungreased, uncovered 2-quart baking dish


Topping Ingredients:
1 Cup brown sugar
1/3 Cup melted butter
1/3 Cup flour
1 Cup chopped Pecans
1 Cup Granola

Topping Instructions:
Mix together until crumbly and spread evenly over potatoes
Bake at 350 degrees for 30 minutes
Serves 8 to 10 people
